Suji Badam | Sugee Almond Cookie Recipe (updated 23 April 2022)

 Hi readers. 

Want to bake something but allergic to eggs & butter? This is cookie recipe doesn't use any eggs and butter so it suitable for vegetarians. And best part, so very delicious! Normally baked for occasions like Hari Raya Eidulfitri or Eiduladha, you can also bake this for tea time.

Ingredients:

500g Ghee

440g Icing Sugar

200g Semolina

1 teaspoon Salt

1 teaspoon Baking Powder

1 teaspoon Bicarbonate Soda

1/2 teaspoon Vanilla powder

100g Almond Powder

800g Plain Flour

Almond slice (optional) for decoration


Instructions:

 

1) Beat the ghee, icing sugar, semolina, salt, baking powder, bicarbonate soda and vanilla powder in the mixer until mixed well and batter is fluffy.

2) Add in the almond powder and beat again until all mixed well. Once mixed, turn off the mixer.

3) Using a whisk or spatula, fold the plain flour into the batter, a little at a time until all mixed and dough is formed.

4) Let the dough rest for 1 hour by setting it aside. (optional)

5) Using hands or teaspoons, make small balls from the dough and place on the cooking tray. You can put the small balls of dough into small cookie cups.

6) Place a half a slice of almond on each dough ball for decoration (optional) or make a mark with a fork.

7) Bake at 160 degrees celcius for about 20 mins.

8) After bake, let the cookies cool for about 20 mins and store or serve.
