Hi readers. One of my favourite dessert growing up is agar-agar gudir or some call it agar-agar santan. Gudir refers to the curdling state when egg is added into the santan (coconut milk) and booled resulting in a mixture that resembles curd and whey.
There are actually 3 versions of this type of jelly, green pandan, brown gula melaka (palm sugar) and pink/red rose. The difference is due to the essence and colouring used, e.g. green pandan using pandan leaves and green colouring. This the recipe for the pink/red rose version.
Agar-Agar Santan Ros | Agar-Agar Gudir Ros | Coconut milk Rose Jelly Recipe
Ingredients:
12g Agar-Agar Powder
250g Sugar
250g Sugar
1 litre or 1000 ml Water
50g Coconut Cream Powder
1 Egg
Rose essence
Red colouring
Instructions:
- Dissolve the 250g Sugar into 500ml of the water.
- Put in the agar-agar powder, rose essence and red colouring.
- Place the pot on the stove on medium heat and stir the mixture until all have been dissolved.
- Once dissolve, bring down the heat.
- Mix remaining 500ml of the water with the 50g coconut cream powder in a separate bowl.
- Add egg into the water and coconut powder mixture and mix well.
- Put in the water, coconut powder and egg mixture into the pot with the agar-agar mixture.
- Bring the mixture up to a boil again, make sure they are mix well.
- Once the mixture boiled, pour the mixture into the preferred mould.
- Let it cool down for 10 mins, then place the mould in the fridge to set for 30 mins.
- The different layer will be seen as the agar-agar cools down.
- Once cooled, cut the agar-agar and serve.
